Spicy Sausage Rice Dish (Print Version)

# Ingredients:

01 - 12 oz andouille or kielbasa sausage, cut into thick rounds
02 - 1 cup white rice (long-grain), washed
03 - 1 green bell pepper, chopped
04 - 1 red bell pepper, chopped
05 - 1 medium onion (yellow), chopped
06 - 3 minced garlic cloves
07 - 1½ cups broth (chicken preferred)
08 - 2 tbsp Cajun spice mix
09 - 1 tbsp olive oil
10 - Salt and black pepper to taste

11 - Fresh parsley leaves
12 - Chopped green onions
13 - Spicy hot sauce

# Instructions:

01 - Cut sausage into round pieces. Chop up peppers and onion, mince garlic, and rinse rice till water's clear.
02 - Add oil to a big pan on medium heat. Fry sausage for 5-7 minutes until edges are crispy. Take it out and set aside.
03 - Using the same pan, cook onion and bell peppers for 3 minutes until soft. Toss garlic in and cook just 1 more minute.
04 - Stir the washed rice into the pan with the veggies. Cook for 2 minutes, stirring off and on, until it smells nutty.
05 - Pour in chicken broth and sprinkle in Cajun seasoning. Give it a good mix, then let it boil. Lower the heat, cover it up, and cook for 15-20 minutes until the rice soaks up all the liquid.
06 - Put the cooked sausage back into the pan. Stir it well, and let it cook for another 3-5 minutes to blend the flavors.
07 - Top with some parsley, green onions, or hot sauce if you like. Serve while it's still warm!
