Coconut Chicken Delight (Print Version)

# Ingredients:

→ Chicken Marinade

01 - 1 teaspoon cayenne pepper
02 - 1/2 teaspoon paprika
03 - Salt and ground black pepper, as much as you like
04 - 2 garlic cloves, chopped finely
05 - 1.5 pounds of boneless chicken thighs, sliced into small chunks

→ Coconut Sauce

06 - 1 bay leaf
07 - 2 teaspoons ground coriander
08 - 2 teaspoons cumin powder
09 - 2 tablespoons cooking oil
10 - 1 onion, chopped into small pieces
11 - Salt and black pepper to adjust flavor
12 - Freshly picked cilantro for a dash of color
13 - 1 red bell pepper, in small cubes
14 - 1 large can (400g) diced tomatoes with juices
15 - 1 can (400ml) creamy coconut milk
16 - 120ml chicken stock
17 - 1 teaspoon smoked paprika

→ For Serving

18 - Steamed white or brown rice

# Instructions:

01 - Mix the chicken chunks with garlic, paprika, cayenne, salt, and pepper in a bowl. Let it sit for a minimum of 15 minutes to soak up the flavor.
02 - Put some oil in a big pan over medium-high heat. Add the marinated chicken and let it cook evenly until golden brown. Take it out and set aside.
03 - Throw the diced onion and bell pepper into the same pan. Keep stirring until they’re soft and smelling amazing, which should take 3-4 minutes.
04 - Add the cumin, coriander, and smoked paprika. Cook for another minute or two to bring out the spice aromas.
05 - Pour in the coconut milk along with the diced tomatoes, including the liquid. Mix everything well until it looks like a sauce.
06 - Return the browned chicken to the pan. Stir in the chicken stock and toss in the bay leaf. Coat the chicken with the flavorful sauce.
07 - Lower the heat, cover the pan with a lid, and let the mixture simmer very slowly for about 20-25 minutes until it’s all tender and the sauce thickens.
08 - Taste the sauce and add more seasoning like salt or pepper if needed. Take out the bay leaf before finishing.
09 - Spoon the Brazilian chicken with coconut sauce over a bed of cooked rice. Sprinkle fresh cilantro on top and serve warm.

# Notes:

01 - To make it mild, add less cayenne pepper. Add extra if you love it spicy!
02 - For extra flavor, let the chicken marinate for up to a couple of hours before cooking.
