# Ingredients:

01 - 1 pound ground beef.
02 - 2 large tomatoes, chopped up.
03 - 1 tablespoon of olive oil.
04 - 1 medium yellow onion, finely chopped.
05 - 3/4 cup of beef broth.
06 - 8 ounces of diced small yellow potatoes (about 3 to 4).
07 - 1 jalapeƱo pepper, finely diced.
08 - 1 clove of garlic, minced.
09 - 1 teaspoon cumin powder.
10 - 1 tablespoon of paprika.
11 - 1 serrano pepper, diced (optional).
12 - 1 tablespoon of Mexican oregano.
13 - A pinch of salt and a sprinkle of black pepper.
14 - Extras for the meal: Warm tortillas or steamed rice, chili flakes, sliced peppers, fresh lime juice, and your favorite hot sauce.

# Instructions:

01 - Turn the heat low and let everything cook gently for 20 minutes. The potatoes will soften nicely while the flavors come together.
02 - Add the ground beef and garlic into the pot. Stir and break it up with a wooden utensil, cooking it about halfway for 5 minutes.
03 - Warm the oil over medium heat in a big pan. Toss in the potatoes, onion, and all your peppers. Cook them for about 5 minutes until they're softer.
04 - Throw in the chopped tomatoes, all the spices, and the beef broth. Stir together thoroughly.
05 - Spoon this over warm rice or roll it into tortillas. Top with fresh lime, chili flakes, or a splash of hot sauce if you like things spicier.
