Turn on your oven to 350°F (175°C) and get a baking sheet covered with parchment paper.

Use a big mixing bowl to beat softened butter with white and brown sugars until it gets fluffy and airy.

Throw in the egg and vanilla and mix well until it’s all blended together.

Take another bowl and stir the flour, baking soda, and salt together until combined.

Slowly stir the flour mixture into the butter mixture until it's just barely combined. Don’t overdo it!

Stir the Fruity Pebbles and white chocolate chips into the dough softly to combine.

Shape the dough into small balls and lay them out on the baking sheet, spreading them out so they’ve got room.

Cook in the oven for about 8-10 minutes. Check that the edges look done, but the centers should still be soft.

With cookies still warm, gently push more Fruity Pebbles on top for added crunch.

Let the cookies sit for 5 minutes on the baking sheet before moving them to a cooling rack. Add optional white chocolate or sprinkles for extra fun!
