Smooth Tomato Basil (Print Version)

# Ingredients:

01 - 1/4 cup of chopped fresh basil.
02 - 3 garlic cloves, minced.
03 - 4 tablespoons of unsalted butter.
04 - 3 cups of finely chopped yellow onions (about 2 onions).
05 - 1 tablespoon of sugar.
06 - 1/3 cup of freshly grated parmesan cheese.
07 - 1/2 teaspoon of black pepper.
08 - A couple of fresh basil leaves and parmesan for garnish.
09 - 2 cups of homemade chicken broth.
10 - 1/2 cup of heavy cream.
11 - Two 28-ounce cans of crushed San Marzano tomatoes.

# Instructions:

01 - Heat the butter in a big pot. Toss in the onions and cook until soft and golden, which could take 10-12 minutes. Stir in the garlic and let it cook until you can smell it.
02 - Add the tomatoes, broth, basil, sugar, and pepper. Bring everything to a boil, then reduce the heat to keep it simmering with the lid on for about 10 minutes.
03 - Grab an immersion blender or a regular one to blend the soup until it’s as smooth as you like.
04 - Mix in the cream and parmesan. Let it cook for just a short while longer, then taste and adjust the seasoning with a bit of salt or more pepper.
05 - Scoop the soup into bowls and sprinkle with a bit more basil and parmesan for that final touch.

# Notes:

01 - San Marzano tomatoes really boost the flavor of this soup.
02 - If the soup is a bit sour for your taste, add more sugar or cream.
03 - This goes great with crispy grilled cheese sandwiches.
