Whisk the egg white with an electric whisk until soft peaks form. In another bowl, mix the yolk with flour, sugar, and baking powder. Gradually whisk in the milk until it's smooth. Carefully fold the fluffy egg white into the yolk mixture.

Add half the oil to a warm non-stick skillet over medium heat. Pour a fourth of the batter into the pan and cook each side for about 2-3 minutes until golden around the edges. Repeat until you have four pancakes, keeping them warm in a low oven.

With the same pan, heat the last bit of oil over high heat. Split the ground beef into two portions. Roll one into a ball and smash it into the pan using a spatula to make it thin. Cook for 2-3 minutes until crispy on one side, flip it, place cheese on top, and cook another minute or two so the cheese melts. Repeat with the other portion.

Stack a pancake, a cheesy patty, a bit of burger sauce, and some sliced gherkins. Top with another pancake. Repeat for the second serving, then dig in while they're hot.
