Brown the ground beef with the green pepper and onion in a big pan. When the meat's no longer pink and the veggies soften up, drain the grease.

Pour in the sloppy joe sauce. Stir it around and simmer for a bit to warm everything up.

Toss the cooked rotini into the pan. Give it a good mix so the pasta gets coated.

Sprinkle in about 1 to 1½ cups of the shredded cheddar. Stir until it melts nicely.

Spread the rest of the cheese on top. Cover the pan and let it sit on low heat until the cheese is gooey and melted. Add a parsley garnish if you like.
