Crispy Potato Wedges (Print Version)

# Ingredients:

01 - 5 garlic cloves, finely chopped
02 - 1/3 cup oil for cooking
03 - 1 cup shredded Parmesan
04 - 5 big russet potatoes, cleaned and dried

→ Seasonings

05 - 1/4 cup chopped fresh cilantro
06 - 1 tsp each of onion and chili powders
07 - 2 tsp ground black pepper
08 - 1 1/2 tsp coarse salt
09 - 1 Tbsp starch (cornstarch)
10 - 1 tsp paprika for some color

# Instructions:

01 - Slice each potato down the middle lengthwise. Then cut each piece into four equal wedges.
02 - Set your oven to 400°F (200°C) and cover a few baking trays with parchment.
03 - In a large bowl, toss the potato wedges with the oil and garlic. Sprinkle in Parmesan, cornstarch, salt, pepper, cilantro, and the spices. Mix everything with your hands until well-coated.
04 - Place the wedges on the baking trays, spacing them so they aren’t crowded. Put them with the skin side resting on the tray and the points sticking upward.
05 - Bake the wedges in the heated oven for 15 minutes.
06 - Lower the heat to 375°F (190°C) and bake for 40 more minutes or until they’re nice and crisp with a golden color.
07 - Serve them warm with whichever dipping sauce you like best.

# Notes:

01 - This makes about 40 wedges, feeding around 8 people.
02 - To make them crispier, soak the sliced potatoes in icy water for half an hour or more, then dry thoroughly before you season.
