After pulling it from the oven, give it five minutes to cool down. Cut it up and dig in.

Pop the dish into your heated oven and let it bake for 25-30 minutes. You want a golden-brown top, and when you stick a toothpick in the middle, it should come out clean.

Sprinkle on the cheddar if you're using it. Pour the rest of the batter evenly on top.

Start with half your pancake mix as your first layer. Scatter your cooked sausage evenly across it.

In a big bowl, mix the pancake mix, milk, egg, butter, vanilla, plus syrup and cinnamon if you're using them. Stir just until blended—don't overdo it.

Brown the sausage in a skillet over medium heat until fully cooked. Drain the extra fat, then set the sausage aside.

Preheat your oven to 190°C. Coat a 23×33 cm pan with butter or a spritz of oil spray to make sure nothing sticks.
