Rotel Sausage Balls (Print Version)

# Ingredients:

01 - 450g of fresh, uncooked spicy sausage.
02 - 1 package of Saint-Môret or Kiri cheese (225g), at room temperature.
03 - 1 can (280g) of diced tomatoes and green chilies, well-drained.
04 - 375 ml of pre-made pancake mix.
05 - 200g of grated Emmental and Cheddar cheese blend, or similar.

# Instructions:

01 - Turn your oven on and set it to 200°C.
02 - Throw everything into a mixing bowl and use a dough hook to combine it properly.
03 - Roll out the mixture into small balls, about the size of a 2-euro coin.
04 - Arrange the balls neatly on a baking sheet covered with parchment paper.
05 - Pop it into the oven and let it bake for 18-20 minutes until the balls look golden brown.

# Notes:

01 - You can freeze these before baking them.
02 - If you bake them straight from the freezer, factor in more time.
03 - Perfect dish for gatherings.
04 - Doubles as a breakfast or snack.
05 - Swap in mild sausage if you don’t want it spicy.
06 - Leftovers? Store them in the fridge.
07 - No fancy mixer? Mix everything by hand instead.
08 - Make sure the canned tomatoes are drained really well.
