Strawberry Ricotta Toast (Print Version)

# Ingredients:

→ Sweet Roasted Strawberries

01 - A pinch of salt
02 - 1 teaspoon balsamic vinegar
03 - 1 tablespoon honey
04 - 1 pint of fresh strawberries, hulled and sliced

→ Fluffy Whipped Ricotta

05 - 1/2 teaspoon of vanilla extract
06 - 1 cup of ricotta cheese
07 - 1 tablespoon of honey

→ Putting It All Together

08 - Optional: Fresh basil or thyme leaves
09 - Extra honey for drizzling on top
10 - Four slices of toasted crusty bread

# Instructions:

01 - Set your oven to 375°F (190°C) and get a baking sheet ready by covering it with parchment. In a mixing bowl, stir together the sliced strawberries, honey, vinegar, and salt. Spread them out evenly on the baking sheet. Roast them for 20-25 minutes until they're soft and get a bit caramelized. Leave them to cool down after.
02 - Grab a medium-sized bowl and stir together the ricotta, honey, and vanilla. Use a whisk or hand mixer to whip it until it’s smooth and light.
03 - Slather some of that whipped ricotta onto each piece of toasted bread. Add a scoop of roasted strawberries on top. Sprinkle on some fresh thyme or basil if you like, and finish off with a drizzle of honey.
