Raspberry Chocolate Cheesecake (Print Version)

# Ingredients:

→ Crust

01 - ¼ cup butter, melted
02 - 2 cups crushed chocolate cookies

→ Filling

03 - ½ cup raspberries, fresh
04 - 24 ounces cream cheese, room temperature
05 - 1 teaspoon vanilla
06 - 3 eggs
07 - ¼ cup dark chocolate, melted
08 - ½ cup sugar

# Instructions:

01 - Set your oven to 325°F (160°C). Blend the crushed chocolate cookies with the melted butter and press the mixture firmly into the bottom of a springform pan.
02 - Whisk the cream cheese, sugar, melted chocolate, and vanilla together until it's smooth. Add the eggs in one at a time, making sure to mix well after each.
03 - Fold in the fresh raspberries carefully, then pour everything evenly over the crust you made earlier.
04 - Pop it in the oven for about 60 minutes, or until the center feels firm. Let it cool all the way before serving.
