Potato Bacon Bombs (Print Version)

01 - ½ cup dry breadcrumbs
02 - 2 cups of cold mashed potatoes
03 - Salt and pepper (season as you like)
04 - 1 egg
05 - Chunks of cheddar, 1-inch cubes (1 for each ball)
06 - Slices of bacon (1 slice per ball)
07 - Cooking oil, ideal for frying (canola works great)
08 - Sour cream for dipping
09 - Toothpicks to hold everything together

# Instructions:

01 - In a bowl, mix the mashed potatoes, egg, and season with salt and pepper. Stir till it’s all combined.
02 - Take a chunk of cheddar, cover it completely with a scoop of the potato mixture, and form a neat ball.
03 - Roll each potato ball in bread crumbs, making sure they’re covered on all sides.
04 - Wrap one slice of bacon around each ball and use a toothpick to keep it in place.
05 - Heat oil to 350°F and fry the potato bombs in small batches (a couple at a time) until the bacon crisps up and the outside turns golden.
06 - Place the fried balls on paper towels to soak up extra oil, then gently remove the toothpicks. Serve warm with sour cream.
