In a bowl, mix the mashed potatoes, egg, and season with salt and pepper. Stir till it’s all combined.

Take a chunk of cheddar, cover it completely with a scoop of the potato mixture, and form a neat ball.

Roll each potato ball in bread crumbs, making sure they’re covered on all sides.

Wrap one slice of bacon around each ball and use a toothpick to keep it in place.

Heat oil to 350°F and fry the potato bombs in small batches (a couple at a time) until the bacon crisps up and the outside turns golden.

Place the fried balls on paper towels to soak up extra oil, then gently remove the toothpicks. Serve warm with sour cream.
