Mix your butter and cream cheese until they're completely smooth. Toss in the vanilla and start adding the powdered sugar. Pour in milk to get it just how you want it.

Get a big bowl and mix in the flour, sugar, baking powder, baking soda, and a pinch of salt.

Push the dry ingredients aside in the bowl to make space, then toss in the egg, milk, oil, and coloring. Stir gently, and fold in sprinkles if you like.

Use about a quarter-cup of batter for each pancake. Heat the pan on medium-high, cook until bubbles pop up (2 minutes), then flip and cook another minute or two until golden brown.
