Pink Kashmiri Chai (Print Version)

# Ingredients:

→ Tea Base

01 - 2 cups whole milk
02 - 4 cups water
03 - 2 tablespoons of green tea (Kashmiri or regular)

→ Spices & Additives

04 - 1-2 star anise
05 - 1/4 teaspoon salt
06 - 1/2 teaspoon baking soda
07 - 1 cinnamon stick
08 - 2 cardamom pods, lightly crushed

→ For Serving

09 - Optional crushed almonds for topping
10 - Sweeten with honey or sugar as you like

# Instructions:

01 - Heat the water in a large pot until it starts bubbling. Toss in the green tea and let it cook for 5 minutes.
02 - After that, mix in the baking soda. The liquid will change to a reddish shade. Boil it a bit longer, around 2 minutes.
03 - Drop in the cinnamon stick, cardamom pods, and star anise. Keep boiling for one more minute.
04 - Turn the heat down to a simmer. Let it gently cook for 20-30 minutes, letting the flavors deepen and the liquid reduce to half.
05 - Stir in the salt. Gradually pour in the milk and turn up the heat to bring everything back to a boil. Keep stirring while the tea turns pink.
06 - Pour the tea through a strainer into your favorite cups. Add some sweetener if you like, and sprinkle crushed nuts on top for a fancy touch. Enjoy it warm!
