Stir together pineapple (drained), vanilla, powdered sugar, and 1 cup of the coconut until it’s combined well.

Use a scooping tool to form balls out of the mixture in your bowl.

Toss each formed ball in the extra shredded coconut until fully covered.

Set them on a prepped baking sheet and refrigerate for about 1 hour, or until they’re firm.

Store in the refrigerator and only take them out when you're ready to enjoy.
