Pesto Fried Eggs (Print Version)

01 - Big eggs, two of them
02 - Salt (kosher style), sprinkle as needed
03 - Pepper, freshly ground, sprinkle as needed
04 - Parmesan cheese, grated, to sprinkle on top
05 - Optional: crusty bread for dipping or on the side
06 - Pesto, 2 spoonfuls (from a jar or homemade)

# Instructions:

01 - Put a small pan with a nonstick surface over medium heat.
02 - Toss the pesto into the pan and let it heat up and sizzle quietly for around half a minute.
03 - Gently break the eggs straight into the warm pesto.
04 - Sprinkle a bit of kosher salt and some freshly ground pepper over your eggs.
05 - Put a lid on the pan and cook until the whites are set but the yolks stay soft. This takes about 2 to 3 minutes.
06 - Top the eggs with a generous amount of grated Parmesan and serve right away. Add crusty bread on the side if you want.
