Peppery Chicken Mushrooms (Print Version)

# Ingredients:

→ Chicken

01 - 2 boneless chicken breasts, diced thinly with no skin
02 - 1 tablespoon of cornstarch
03 - 1 teaspoon of salt
04 - Ground black pepper, half a teaspoon

→ Vegetables

05 - 1 bell pepper, red or green, sliced into strips
06 - 3 garlic cloves, chopped finely
07 - 1 medium-sized onion, cut into slices
08 - 8 ounces of shiitake or button mushrooms, cut into pieces
09 - Optional chopped green onions for decorating the dish

→ Sauce

10 - 2 tablespoons of oil for cooking, used in two parts
11 - 1 teaspoon of honey
12 - 1 tablespoon of soy sauce
13 - Half a teaspoon of rice vinegar
14 - A tablespoon of oyster sauce
15 - 1 teaspoon of ground black pepper

# Instructions:

01 - Mix the chicken pieces with the cornstarch, salt, and freshly-ground black pepper. Toss until all of it is well coated.
02 - Put a large pan on medium-high heat. Add 1 tablespoon of oil and cook the chicken pieces for 4-5 minutes, stirring until golden brown. Remove from the pan and set them aside for later.
03 - In the same pan, heat the leftover oil. Stir-fry the onion with the bell pepper for 2-3 minutes, then throw in the garlic and mushrooms. Keep cooking for another 2-3 minutes.
04 - In a small bowl, combine the oyster sauce, soy sauce, honey, black pepper, and rice vinegar until it blends smoothly.
05 - Add the chicken back into the veggies and pour in your sauce mix. Stir it all until everything is coated well and warmed up. This only takes 1 or 2 minutes.
06 - Sprinkle chopped green onions on top if you’d like. Serve it hot over some steamed rice or your favorite noodles.
