Turn on your oven and let it warm up to 190°C. Prep your baking trays with baking paper.

Using a mixer or by hand, mix together the peanut butter, softened butter, and both types of sugar until creamy.

Crack in the egg and splash in the vanilla. Beat everything until it’s nice and smooth.

Slowly mix in the flour, baking soda, and salt until you’ve got dough that sticks together.

Grab small bits of dough, roll them into 2.5 cm balls, and roll each one in sugar.

Pop them in the oven for about 8–10 minutes until they puff up slightly but keep their round shape.

Once you take the cookies out, press a chocolate piece into the center while they’re warm.
