Set your oven to 220°C (425°F) and let it preheat.

Toss the apple slices with the butter and maple syrup in a baking dish. Pop it in the oven and roast for 25 minutes until soft and caramelized.

Lay the puff pastry out flat on a baking sheet lined with parchment paper. Put the brie in the middle and cut away a little bit of the rind from the top. Keep the rind on the sides and bottom. Spread apple butter or fig preserves across the top.

Pull the corners of the pastry up and fold them over the brie. Brush the outside with the beaten egg and give it a light sprinkle of coarse sugar.

Bake in the oven for about 20–25 minutes or until the pastry turns a deep golden color.

Spoon those roasted apples on top of the baked brie. Add a couple of thyme sprigs and enjoy as-is or pair with crackers.
