Baked Chicken Rice (Print Version)

# Ingredients:

01 - 5 skinless chicken thighs, bone still in.
02 - Chopped onion, 1 piece.
03 - 2 garlic cloves, finely chopped.
04 - 2 tablespoons of butter.
05 - A cup and a half of white rice.
06 - A cup and a half of chicken broth.
07 - 1 1/4 cups water.
08 - 1 teaspoon of paprika.
09 - 1 teaspoon thyme (dried).
10 - 1/2 teaspoon garlic powder.
11 - 1/2 teaspoon onion powder.
12 - 3/4 teaspoon salt.
13 - Black pepper, add as much as you like.
14 - Cooking spray (oil-based).
15 - Chopped fresh parsley for decoration.

# Instructions:

01 - Preheat your oven to 350°F. Toss some butter and onions into a 9x13 pan. Let them cook for 15 minutes till lightly browned.
02 - Mix the seasoning together, then rub it all over the chicken thighs till nicely coated.
03 - Throw the rice on top of the cooked onions. Stir in garlic, broth, and water till combined.
04 - Place the seasoned chicken on top of the rice. Cover the pan with foil. Bake for 30 minutes.
05 - Take off the foil, spray the chicken with some cooking oil, and bake another 20 minutes till the rice is tender and chicken is ready.

# Notes:

01 - Any type of long-grain rice does the trick.
02 - If you swap for chicken thighs without bones, adjust cooking time as needed.
