Shrimp Scampi Orzo (Print Version)

# Ingredients:

→ Main Ingredients

01 - 1 cup orzo pasta, dried
02 - 1/3 cup shallots, finely minced
03 - 1 lb shrimp, cleaned and deveined
04 - 2 tbsp olive oil, split
05 - 5 garlic cloves, sliced thin
06 - 1 lemon
07 - 4 tbsp butter, separated
08 - A pinch of crushed red chili flakes
09 - 1/3 cup white wine (or broth with vinegar splash)

→ Herbs & Seasonings

10 - Kosher salt
11 - Black pepper, freshly ground
12 - 2 tbsp fresh chives, chopped
13 - 1/4 cup parsley, chopped fresh

# Instructions:

01 - Mix shrimp with a little oil, black pepper, lemon zest, garlic slices, and salt.
02 - Cook shrimp in melted butter just until pink and no longer clear, about 3 minutes. Set aside.
03 - In the same pan, cook garlic, chili flakes, and shallots in oil and butter. Toss in the orzo to toast for a minute, then pour in wine and let it reduce.
04 - Add water and let it bubble on low heat, stirring here and there, until the orzo softens and soaks up the liquid, about 12 minutes.
05 - Stir the shrimp back into the pan along with half the herbs. Drizzle with olive oil, squeeze lemon juice, and scatter the rest of the herbs on top with a bit of pepper.

# Notes:

01 - Good in the fridge for up to 3 days.
02 - Add some broth or water when reheating so the orzo stays moist.
03 - Squeeze fresh lemon on top after reheating for extra flavor.
