No Bake Energy Bites (Print Version)

# Ingredients:

01 - 1/3 cup honey or maple syrup.
02 - 1/2 cup ground flaxseed meal.
03 - 1/2 cup peanut butter, smooth and creamy.
04 - 1 teaspoon vanilla essence.
05 - 1/2 cup chocolate chips (dark or vegan).
06 - 1 cup rolled oats.
07 - 1 tablespoon chia seeds (this is up to you!).
08 - 2/3 cup shredded coconut, lightly toasted (sweetened or not).

# Instructions:

01 - Toss everything into a big mixing bowl and stir until the mixture is blended well.
02 - Pop the bowl into the fridge with a cover on for about 1-2 hours. You want the mixture to firm up.
03 - Scoop and roll the mixture into 1-inch round bites.
04 - Either dig in right away, or store them in a sealed container in the fridge for one week, or freeze them for up to three months.

# Notes:

01 - If you’re short on patience, spread the mixture onto a baking tray and freeze it for 20 minutes to set faster.
