No-Bake Cheesecake Bites (Print Version)

# Ingredients:

01 - 1 and 1/2 cups crushed graham crackers
02 - 12 oz fresh raspberries
03 - 1/3 cup white sugar
04 - 8 oz whipped topping
05 - 16 oz softened cream cheese

# Instructions:

01 - Crush graham crackers into crumbs using a blender or food processor, or get pre-crushed crumbs. Transfer into a bowl.
02 - In a big bowl, mix the cream cheese and sugar using an electric hand mixer until it’s super smooth.
03 - Toss the raspberries into the mix and stir gently until they’re spread out evenly.
04 - Gently fold the whipped topping into the mixture. Cover it up and place it in the freezer for a few hours to firm up.
05 - Scoop out small portions (around 1 to 1.5 tablespoons each) of the cream mix. Roll these in crumb coating until fully covered.
06 - Arrange the coated bites on a parchment-lined tray and freeze them for a couple of hours. Serve after letting them sit at room temperature for a few minutes.

# Notes:

01 - Pop the mix back in the freezer if it softens too much while working
02 - Store-bought graham cracker crumbs work fine
03 - Wait about 5 minutes before serving for the best texture
