Nacho Cheese Sauce Recipe (Print Version)

# Ingredients:

01 - 2 tbsp of unsalted butter.
02 - 2 tbsp of all-purpose flour.
03 - 1 cup of full-fat milk.
04 - 225 grams of creamy cheese (Emmental or Comté).
05 - 2-3 tbsp of brine from pickled jalapeños.
06 - A small pinch of salt (optional).

# Instructions:

01 - In a small pot or saucepan, heat it over medium. Toss in the butter and let it fully melt before you continue.
02 - When the butter’s melted, add the flour while stirring nonstop. Cook it for a few minutes (2-3) until it’s smooth and smells slightly toasted.
03 - While stirring, slowly pour in the milk. Let it softly bubble around the edge as it thickens.
04 - Lower the heat to keep things gentle. Add the cheese bit by bit, stirring after each addition until the sauce turns silky.
05 - Pour in that jalapeño brine and mix well for a spicy touch. Want more heat? Add some sliced pickled jalapeños if you feel like it.
06 - Give it a taste and adjust the salt if needed. Serve right away with your favorite chips for some ultimate snack time!

01 - Makes roughly 2 cups of nacho cheese, enough for 8 snack servings.
02 - For the smoothest result, go with whole milk and a processed cheese blend.
03 - If you're into extra spiciness, throw in some chopped-up pickled jalapeños.
