Molasses Crumb Pie (Print Version)

# Ingredients:

→ Pie Crust

01 - 1/2 teaspoon white sugar
02 - 1/2 cup (115g) cold unsalted butter, chopped into pieces
03 - 1/2 teaspoon kosher salt
04 - 1 1/4 cups (175g) all-purpose flour
05 - 3-4 tablespoons ice-cold water

→ Crumb Topping

06 - 1/2 teaspoon ground nutmeg
07 - 1 teaspoon cinnamon powder
08 - 1/2 cup (115g) cold unsalted butter, cut into cubes
09 - 1 1/2 cups (210g) all-purpose flour
10 - 1/4 teaspoon kosher salt
11 - 1/2 cup (110g) packed dark brown sugar

→ Filling

12 - 3/4 cup (160g) hot water
13 - 3/4 cup (230g) molasses
14 - 1/2 teaspoon baking soda

# Instructions:

01 - Combine the flour, sugar, salt, and butter in a food processor until crumbly. Slowly add water until dough comes together. Let it rest in the fridge for an hour.
02 - Roll out dough into a 12-inch circle and place it in a pie dish. Crimp the edges, then chill for half an hour.
03 - Stir the dry ingredients together, then use your hands or a fork to mix in butter until it's crumbly.
04 - Blend molasses, hot water, and baking soda. Mix in a third of the crumb mixture.
05 - Pour the filling into the prepared crust and sprinkle the rest of the crumb mixture on top. Bake at 450°F for 15 minutes, then lower to 350°F and bake for another 25 minutes.

# Notes:

01 - Wait for the pie to cool completely before cutting.
02 - Goes perfectly with a hot cup of coffee.
03 - You can swap regular molasses with light molasses if you want.
