Moist Banana Loaf (Print Version)

# Ingredients:

01 - 1¼ cups mashed bananas (use 3-4 ripe ones)
02 - 2 large eggs, at room temperature
03 - ½ teaspoon kosher salt
04 - 1 teaspoon baking powder
05 - 113g butter, softened (½ cup)
06 - 1½ cups (300g) white sugar
07 - 2 teaspoons vanilla extract
08 - 2 cups regular flour
09 - ¼ cup buttermilk, at room temperature
10 - ⅛ teaspoon baking soda

# Instructions:

01 - Heat your oven to 350°F. Coat a 9x5-inch loaf pan lightly with nonstick spray.
02 - In a small bowl, mash the bananas using a fork.
03 - Beat butter with sugar for about 2 minutes. Add one egg at a time, then follow with vanilla and buttermilk.
04 - Blend flour, salt, baking soda, and baking powder together using a sifter.
05 - Slowly stir dry mix into wet mix. Gently fold in those mashed bananas last.
06 - Bake for about 65-70 minutes. Check by poking with a toothpick; it should come out with just a few crumbs.
