Savory Miso Beans (Print Version)

# Ingredients:

→ The sauce

01 - 1 teaspoon sesame oil
02 - 2 teaspoons maple syrup or agave nectar
03 - 1 tablespoon soy sauce
04 - 1 tablespoon white miso

→ The green beans

05 - 3 garlic cloves, minced
06 - 1 teaspoon toasted sesame seeds
07 - 2 teaspoons avocado oil or another neutral oil with a high smoke point
08 - 1 pound green beans

# Instructions:

01 - Mix the white miso, soy sauce, sesame oil, and maple syrup together in a little bowl until smooth.
02 - Slice off the ends of each green bean. If they’re long, chop them into halves at a diagonal—it looks better.
03 - Put a large skillet or wok on medium-high heat and let it get nice and hot.
04 - Drizzle the avocado oil onto the hot pan. Toss in the green beans and stir to coat them well. Spread them out so they cook evenly. Let them cook for about 3–5 minutes, turning them occasionally until lightly charred and fork-tender.
05 - Drop in the chopped garlic and stir it constantly for 30 seconds, making sure it doesn’t burn.
06 - Pour the sauce over the green beans, sprinkle with sesame seeds, and toss everything to mix. Remove from the heat and dish it up right away.

# Notes:

01 - If you don’t have miso, try using tahini with a little salt instead.
02 - Swap soy sauce with tamari or coconut aminos if needed.
