# Ingredients:

01 - 1/2 cup of corn (use fresh, canned, or frozen)
02 - 1/2 a red onion, chopped into fine pieces
03 - 1 orange bell pepper, chopped into small cubes
04 - 3 Persian cucumbers, sliced into thin pieces

→ Herbs and Seasonings

05 - 1/4 teaspoon of freshly ground pepper
06 - 1/4 teaspoon of salt
07 - 1/2 teaspoon of chipotle chili powder
08 - 1/4 cup of chopped mint leaves

→ Dressing

09 - 1 tablespoon of honey
10 - 1 tablespoon of tangy red wine vinegar
11 - 1 tablespoon of fresh lime juice

→ Garnish

12 - 1/4 cup of crumbled Cotija cheese (or substitute with feta)

# Instructions:

01 - Mix the sliced cucumbers, diced bell pepper, chopped onion, and corn in a large bowl.
02 - In a smaller bowl, stir together the honey, lime juice, red wine vinegar, chili powder, salt, and pepper until smooth.
03 - Drizzle the dressing over the veggies and toss everything together until coated evenly.
04 - Gently mix in the chopped mint leaves.
05 - Cover and chill the bowl in the fridge for about 30 minutes so the flavors can blend.
06 - Right before serving, sprinkle the crumbled cheese on top and give one last gentle mix.
