Tzatziki Chicken Salad (Print Version)

# Ingredients:

→ Protein

01 - 2 cups shredded cooked chicken breast

→ Sauce Base

02 - 1 tablespoon chopped fresh parsley
03 - 1 medium-sized cucumber, grated and drained well
04 - 2 tablespoons freshly squeezed lemon juice
05 - 2 minced garlic cloves
06 - 1 cup plain Greek yogurt
07 - 2 tablespoons fresh dill, minced

→ Aromatics

08 - Ground black pepper and salt to your liking
09 - 1/4 cup finely chopped red onion

# Instructions:

01 - Grab a big bowl, toss in the yogurt, drained cucumber, minced garlic, parsley, dill, and lemon juice. Stir until everything's combined nicely.
02 - Throw the shredded chicken and the chopped red onion into the yogurt mix. Stir until the chicken's fully coated.
03 - Sprinkle in some salt and pepper to suit your taste.
04 - Pop the salad in the fridge for at least half an hour so the flavors can blend together.
05 - Dish up the chicken salad on greens, in a pita, or with crackers—whatever works for you!

# Notes:

01 - To keep the salad from getting watery, wrap the grated cucumber in a towel and squeeze out all the extra liquid before mixing.
02 - Store this in the fridge; it stays fresh for about 2 days.
