Steak Bowl (Print Version)

# Ingredients:

→ Steak and Marinade

01 - 1 garlic clove, finely chopped
02 - 1 teaspoon dried thyme leaves
03 - 1 teaspoon oregano (dried)
04 - 3 tablespoons olive oil
05 - 1 tablespoon squeezed lemon juice
06 - ½ teaspoon table salt
07 - ¼ teaspoon ground black pepper
08 - 1 pound sirloin, cut about 1 inch thick

→ Base Layer

09 - A cup of roasted chickpeas
10 - 2 cups of pre-cooked grains (quinoa, brown rice, or cauliflower rice)

→ Add-On Toppings

11 - Half of a thinly sliced red onion
12 - A handful of cherry tomatoes, halved
13 - ⅓ cup crumbled feta cheese
14 - ¼ cup chopped dill or parsley (use what you've got)
15 - 1 cucumber, diced up
16 - Half a cup of pitted kalamata olives

→ Creamy Tzatziki

17 - A pinch of salt and pepper (to your taste)
18 - 1 grated cucumber, squeeze to remove water
19 - 1 cup of plain Greek yogurt
20 - 1 tablespoon fresh lemon juice
21 - 1 clove of garlic, minced finely
22 - 1 tablespoon of freshly chopped dill

→ Lemon Dressing

23 - A teaspoon of dried oregano
24 - A pinch of salt and ground black pepper
25 - 2 tablespoons lemon juice (freshly squeezed)
26 - 3 tablespoons of olive oil
27 - 1 garlic clove, minced small
28 - 1 teaspoon honey (optional)

# Instructions:

01 - Mix olive oil, garlic, lemon juice, oregano, thyme, salt, and pepper together in a small bowl. Coat your steak with the mixture completely and let it sit in the fridge for at least half an hour, or even up to 4 hours.
02 - Combine the yogurt, grated cucumber (squeezed dry), lemon juice, dill, garlic, salt, and pepper in a bowl. Chill in the fridge until you're ready to eat.
03 - Stir together olive oil, fresh lemon juice, honey, oregano, garlic, salt, and pepper using a whisk until smooth and combined.
04 - Crank up the heat on a skillet or grill pan. Sear the steak for about 4-5 minutes per side if you like it medium-rare. Let it rest on a plate for around 5-10 minutes, then slice it thinly, cutting against the grain.
05 - Get your grain base into a bowl. Nicely arrange sliced steak and the toppings in separate sections. Drizzle with the vinaigrette and tzatziki—or leave them on the side for dipping.

# Notes:

01 - Skip the chickpeas if you're sticking to keto or paleo.
02 - To make it free from dairy, swap Greek yogurt with coconut yogurt and leave out the feta cheese.
03 - For Whole30, don't include the honey in the lemon dressing.
