Mediterranean Steak Bowl (Print Version)

# Ingredients:

→ Marinated Steak

01 - 450g sirloin steak, roughly 2.5cm thick
02 - 3 tablespoons olive oil
03 - 2 cloves garlic, finely chopped
04 - 1 tablespoon fresh lemon juice
05 - 1 teaspoon dried oregano leaves
06 - 1 teaspoon thyme, dried
07 - ½ teaspoon fine salt
08 - ¼ teaspoon ground black pepper

→ Grain Base

09 - 2 cups cooked rice, quinoa, or cauliflower rice
10 - 1 cup crispy roasted chickpeas (optional for extra crunch)

→ Fresh Toppings

11 - 1 cup cherry tomatoes, sliced in half
12 - 1 diced cucumber
13 - ½ red onion, thinly sliced into rings
14 - ½ cup pitted kalamata olives
15 - ⅓ cup crumbled feta (optional)
16 - ¼ cup parsley or dill, freshly chopped

→ Creamy Tzatziki

17 - 1 cup plain Greek yogurt (coconut yogurt works too if dairy-free)
18 - ½ cucumber, grated and squeezed to remove water
19 - 1 tablespoon lemon juice
20 - 1 garlic clove, finely chopped
21 - 1 tablespoon dill, chopped fresh
22 - Salt and pepper, adjust to your liking

→ Zesty Lemon Dressing

23 - 3 tablespoons olive oil
24 - 2 tablespoons fresh lemon juice
25 - 1 teaspoon honey (skip if avoiding sweeteners)
26 - 1 clove garlic, chopped
27 - ½ teaspoon oregano (dried)
28 - Salt and pepper, season to taste

# Instructions:

01 - Stir olive oil, garlic, lemon juice, oregano, thyme, salt, and pepper in a bowl. Cover steak completely in this mixture, then chill in the fridge for 30 minutes up to 4 hours for the best flavor.
02 - Blend Greek yogurt, grated cucumber (press out the water), lemon juice, garlic, dill, salt, and pepper in a bowl. Keep it chilled till you're ready to use.
03 - Combine olive oil, lemon juice, honey, garlic, oregano, salt, and pepper in a small bowl. Whisk until it mixes together nicely.
04 - Warm up a cast iron pan or a grill pan on high heat. Cook steak for 4–5 minutes per side for medium-rare. Let it rest for 5–10 minutes, then thinly slice against the grain.
05 - Place the cooked grains as a base in your bowl, lay steak slices and fresh toppings in separate sections, then drizzle everything with tzatziki and dressing right before eating.

# Notes:

01 - To prep for meals later, store the parts in separate containers and put them together when you're ready to eat. The steak works both cold and warm.
