Chicken Patties Mediterranean (Print Version)

# Ingredients:

→ Base Ingredients

01 - 1 cup chopped baby spinach
02 - 1 medium onion, diced
03 - 1 tablespoon minced garlic
04 - 1 lb ground chicken

→ Binding and Flavoring

05 - 1/4 teaspoon black pepper
06 - 1/2 teaspoon ground cumin
07 - 1 tablespoon fresh lemon juice
08 - 1/2 cup breadcrumbs
09 - 1/4 cup Greek yogurt
10 - 2 tablespoons chopped fresh dill
11 - 1/2 teaspoon paprika
12 - 1 teaspoon dried oregano
13 - 1/2 teaspoon salt

→ Cooking

14 - 3 tablespoons olive oil

# Instructions:

01 - Start by softening the diced onion in a skillet with 1 tablespoon of olive oil over medium heat. After about 5 minutes, when it looks clear, toss in the garlic and give it another 30 seconds. Take it off the stove.
02 - Mix everything in a big bowl: the cooked onion and garlic, spinach, chicken, breadcrumbs, yogurt, dill, lemon juice, oregano, paprika, cumin, salt, and pepper. Make sure it’s all evenly blended.
03 - Divide the mix into 8 equal portions. Flatten each one so it’s about a half-inch thick.
04 - Heat the rest of the olive oil in a pan over medium heat. Cook the patties for around 5 minutes per side, flipping once, until they’re golden and their insides hit 165°F (74°C).
05 - Let the patties drain on paper towels to get rid of extra oil. Serve them warm with anything you like on the side.

01 - Great as a filling for pita wraps, a topping for salad, or paired with tzatziki sauce as a starter.
02 - Make ahead! Refrigerate cooked patties for up to 3 days or stash them in the freezer for a whole month.
