Stir mashed potatoes, cheese, the egg, a pinch of salt, garlic powder, pepper, and green onions together in a bowl until everything's well blended.

Take a bit of the mix, roll it into bite-sized balls, and cover each one completely with breadcrumbs.

Set the coated balls on a baking tray, then gently brush the tops with melted butter to finish.

Put them in the oven at 375°F (190°C) and bake for around 20–25 minutes till the outside turns crispy and golden.
