Stir mashed potatoes, egg, and as much salt and pepper as you like in a bowl until it's all blended.

Grab some potato mix, cover a cheese chunk with it, and roll it into a ball shape.

Roll each potato ball in bread crumbs to coat them evenly all over.

Wrap each ball in a piece of bacon and fasten it with a toothpick so it stays together.

Heat up oil to 350°F, then fry a couple of bombs at a time till the bacon is crisp and the outside is golden.

Set them on paper towels to drain off oil. Pull out the toothpicks and enjoy them warm with sour cream.
