Potato Bacon Bombs (Print Version)

# Ingredients:

01 - Cold mashed potatoes (2 cups)
02 - One egg
03 - Pepper and salt—use as needed
04 - Dry bread crumbs (½ cup)
05 - Chunks of cheddar, each about 1 inch (1 per ball)
06 - Slices of bacon (1 slice per ball)
07 - Oil for frying (canola works great)
08 - Sour cream for dipping
09 - Toothpicks to keep things in place

# Instructions:

01 - Stir mashed potatoes, egg, and as much salt and pepper as you like in a bowl until it's all blended.
02 - Grab some potato mix, cover a cheese chunk with it, and roll it into a ball shape.
03 - Roll each potato ball in bread crumbs to coat them evenly all over.
04 - Wrap each ball in a piece of bacon and fasten it with a toothpick so it stays together.
05 - Heat up oil to 350°F, then fry a couple of bombs at a time till the bacon is crisp and the outside is golden.
06 - Set them on paper towels to drain off oil. Pull out the toothpicks and enjoy them warm with sour cream.
