Cut the salami into quarters and slice the pickles if they aren't already. Dry them with a napkin to remove any liquid.

Cut the cheese block into neat cubes, about an inch in size, so they soak up the marinade evenly.

Grab a medium bowl and mix together the olive oil, vinegar, garlic, herbs, red pepper flakes, black pepper, salt, and honey or sugar if you're using one.

In a big bowl or storage container, layer the cheese cubes, salami pieces, and pickles. Pour the dressing on top, making sure everything is covered nicely.

Close the container and let it chill in the fridge for a couple of hours, or overnight for a more intense flavor. Stir now and then so every piece soaks up the dressing. It's best served after returning to room temperature.
