Cheese and Salami Bites (Print Version)

# Ingredients:

→ Main Parts

01 - 8 to 10 slices of large salami (cut into four pieces each)
02 - 1 pound of firm cheese, diced into cubes (try cheddar, Monterey Jack, or Colby Jack)
03 - ½ cup of pickles (small ones or slices, like dill or bread-and-butter)

→ Dressing

04 - 2 tablespoons of white wine vinegar
05 - ⅓ cup of olive oil, extra virgin
06 - ½ teaspoon of red pepper flakes (optional)
07 - 1 teaspoon of honey or sugar (optional)
08 - ¼ teaspoon of salt
09 - 2 minced garlic cloves
10 - 1 tablespoon of thyme or parsley, chopped fresh
11 - ¼ teaspoon of black pepper

# Instructions:

01 - Cut the salami into quarters and slice the pickles if they aren't already. Dry them with a napkin to remove any liquid.
02 - Cut the cheese block into neat cubes, about an inch in size, so they soak up the marinade evenly.
03 - Grab a medium bowl and mix together the olive oil, vinegar, garlic, herbs, red pepper flakes, black pepper, salt, and honey or sugar if you're using one.
04 - In a big bowl or storage container, layer the cheese cubes, salami pieces, and pickles. Pour the dressing on top, making sure everything is covered nicely.
05 - Close the container and let it chill in the fridge for a couple of hours, or overnight for a more intense flavor. Stir now and then so every piece soaks up the dressing. It's best served after returning to room temperature.
