03 - 2 tablespoons brown sugar
04 - 1 cup all-purpose flour

07 - 1 large egg
08 - 1 cup milk

09 - Cooking spray or oil to coat your pan
10 - Maple syrup for topping
11 - 1 cup crumbled cooked bacon with maple flavor

# Instructions:

01 - Turn your oven on to 350°F (175°C). Lightly coat a mini muffin pan with oil or cooking spray.
02 - Grab a big mixing bowl and combine the flour, salt, sugar, and baking powder. Whisk it until the blend looks uniform.
03 - In a separate bowl, whisk together the milk, egg, vanilla extract, and butter until smooth and well blended.
04 - Pour your wet mixture into the dry ingredients. Stir gently, leaving a few lumps behind, and avoid overmixing.
05 - Mix the crumbled bacon into the batter, folding it carefully to spread it evenly.
06 - Scoop the batter into the muffin cups, filling each one about two-thirds full so the batter can puff up as it cooks.
07 - Bake for about 12-15 minutes, or until they turn lightly golden and a toothpick stuck in the middle comes out clean.
08 - Pull the pan out and let the pancake bites cool for a little while. Carefully remove them from the pan.
