# Ingredients:

08 - 1 cup buttermilk

# Instructions:

01 - Turn your oven to 350°F (175°C). Put butter in a 9×9-inch dish and pop it into the oven for a few minutes so it melts completely.
02 - Combine sugar, salt, flour, and baking powder in a big bowl. Pour in the buttermilk, vanilla, and lemon extract if you’re using it, then stir until smooth.
03 - Pour your batter straight into the dish with the melted butter. Don’t stir—just leave it as it is.
04 - Spoon the lemon pie filling or curd evenly across the top of the batter. As it cooks, it’ll sink and form a creamy layer at the bottom.
05 - Bake for about 45-55 minutes. You’ll know it’s done when the edges are lightly browned and puffed, and the center is set but soft. Check with a toothpick—it should come out mostly clean with a few crumbs.
06 - Take the dish out of the oven and let it rest for 10-15 minutes. It needs a little time to firm up before serving.
07 - Slice into portions and serve warm. You can add ice cream, whipped cream, powdered sugar, or lemon slices on top if you want.
