Sweet Smoky Cashews (Print Version)

# Ingredients:

→ Cashew Candy Topping

01 - 2 tsp sea salt, plus extra if needed
02 - 32 oz roasted, unsalted whole cashews (roughly 6.5 to 7 cups)
03 - 2 tbsp oil (like canola), with extra for greasing the pan
04 - 1/3 cup packed light brown sugar
05 - 1/4 cup honey
06 - 2 tbsp lime juice, freshly squeezed
07 - 2 tsp ground chipotle chili or chipotle powder

# Instructions:

01 - Grease a big baking pan with raised edges (about 12x18x1-inch) and preheat your oven to 350°F with the rack centered.
02 - Grab a big bowl and stir the cashews with the oil until they’re coated evenly.
03 - In a smaller bowl or a large measuring cup, mix together the brown sugar, honey, lime juice, chipotle, and salt until it looks blended.
04 - Pour the glaze mix over the cashews and toss them around so every piece is covered.
05 - Spread the coated cashews on your prepared sheet. Bake for 24 minutes, giving them a stir about every 8 minutes.
06 - When 24 minutes are done, keep baking for a few more minutes until the nuts get golden and shiny. Total baking time should be 25 to 30 minutes.
07 - Use a slotted spoon or spatula to move the cashews to a fresh sheet pan right out of the oven. Stir every minute or so while cooling and add more salt if needed.
08 - Once cooled all the way, transfer the cashews to a sealed container to keep at room temperature.

01 - Keep stirring as the cashews cool to stop them from sticking together and to ensure the glaze spreads just right.
