Lemongrass Chicken (Print Version)

# Ingredients:

01 - 4 skinless, boneless chicken thighs
02 - 1-inch piece of ginger, finely grated
03 - 2 large garlic cloves, minced
04 - 2 stalks of lemongrass, chopped finely
05 - 1 tablespoon vegetable oil (extra for cooking)
06 - 2 tablespoons light soy sauce
07 - 2 tablespoons fish sauce
08 - 1 teaspoon chili flakes, optional
09 - 1 tablespoon brown sugar or honey
10 - 1 tablespoon fresh lime juice

→ For Serving

11 - salt and pepper as needed
12 - 1 tablespoon toasted sesame seeds if you like
13 - fresh cilantro for decoration

# Instructions:

01 - Grab a bowl and mix together chopped lemongrass, garlic, ginger, fish sauce, soy sauce, honey, lime juice, and chili flakes.
02 - Sprinkle the chicken thighs with salt and pepper. Put them into a dish or bag with the marinade and chill for at least an hour, or overnight if you can.
03 - Heat a grill or pan and cook the chicken for 6-7 minutes on each side until it reaches 165°F inside. Let it sit for a bit, then cut it up.
04 - Top with cilantro, sesame seeds, and lime wedges. Pair it with rice or veggies on the side.
