Fresh Lemon Pizza (Print Version)

# Ingredients:

→ Pizza Dough

01 - 1 portion of ready-made dough or homemade no-knead pizza dough

→ Lemon Brine

02 - 1 tablespoon freshly chopped parsley
03 - 1 small clove garlic, finely grated
04 - 1 tablespoon water
05 - 2 tablespoons high-quality olive oil
06 - ¼ teaspoon freshly cracked black pepper
07 - ¼ teaspoon regular table salt
08 - 1 teaspoon lemon zest
09 - 1 teaspoon freshly squeezed lemon juice

→ Mozzarella

10 - Around 150 grams of fresh mozzarella or a ½ to ⅓ cup of shredded mozzarella (firmer variety)

→ To Finish

11 - 2 tablespoons finely grated parmesan
12 - 1 tablespoon chopped fresh parsley
13 - Black pepper to taste, freshly ground
14 - 1 tablespoon juice from a fresh lemon

# Instructions:

01 - Start by preheating the oven and shaping your dough as described in the easy no-knead pizza guide, stopping at step 5.
02 - If your mozzarella is packed in water, slice it into ½-inch pieces and pat it dry with a paper towel to get rid of extra moisture.
03 - Lay the dough on a piece of parchment paper. Starting from the middle, gently press it out with your fingers until it forms a rectangle about 9x13 inches. Carefully move it onto a pizza peel or the underside of a baking tray for transferring.
04 - Combine everything for the brine in a jar with a lid. Seal it and shake until it blends well.
05 - After stretching the dough, use your fingertips to create small indentations. Drizzle the brine on top, aiming for the dimples, then sprinkle mozzarella evenly across the pizza.
06 - Carefully slide the dough onto a hot pizza stone using the pizza peel. Let it bake until the cheese is bubbly and the edges are golden, about 8-10 minutes in a fan oven.
07 - Take the pizza out of the oven and pour some lemon juice over it. Sprinkle parmesan, parsley, and a bit of black pepper or chili flakes if you're into that. Slice it up and enjoy immediately.

# Notes:

01 - Don't have a pizza stone? Use a baking tray upside down on your oven's bottom shelf to preheat. It'll crisp up your pizza nicely.
02 - Leftover slices can be stored tightly covered in the fridge for a day or frozen for up to 3 months. Warm frozen slices in the oven to make them crispy again.
