If your mozzarella is packed in water, slice it into ½-inch pieces and pat it dry with a paper towel to get rid of extra moisture.

Lay the dough on a piece of parchment paper. Starting from the middle, gently press it out with your fingers until it forms a rectangle about 9x13 inches. Carefully move it onto a pizza peel or the underside of a baking tray for transferring.

Combine everything for the brine in a jar with a lid. Seal it and shake until it blends well.

After stretching the dough, use your fingertips to create small indentations. Drizzle the brine on top, aiming for the dimples, then sprinkle mozzarella evenly across the pizza.

Carefully slide the dough onto a hot pizza stone using the pizza peel. Let it bake until the cheese is bubbly and the edges are golden, about 8-10 minutes in a fan oven.

Take the pizza out of the oven and pour some lemon juice over it. Sprinkle parmesan, parsley, and a bit of black pepper or chili flakes if you're into that. Slice it up and enjoy immediately.
