Lemon Chicken Rice Bowl (Print Version)

# Ingredients:

→ Base

01 - 1 yellow onion, chopped into small bits
02 - 2-3 medium carrots, peeled and diced (about 1 cup)
03 - 2 tablespoons unsalted butter
04 - 6 garlic cloves, finely minced
05 - 2 tablespoons of olive oil
06 - 3 celery stalks, sliced thinly (about 1 cup)
07 - 1 pound chicken thighs, boneless and skinless

→ Seasonings

08 - Add salt and pepper as needed
09 - 1 teaspoon dried oregano
10 - 2 teaspoons chicken bouillon (granulated)
11 - 1 tablespoon grated lemon zest
12 - Pinch to ¼ teaspoon red chili flakes (optional)
13 - ½ teaspoon dried basil
14 - ½ teaspoon thyme (dried)
15 - 1 bay leaf
16 - ½ teaspoon of salt

→ Liquids

17 - ¼ cup fresh lemon juice
18 - 8 cups chicken stock with low salt

19 - 2 yolks of eggs
20 - 2 big eggs
21 - 1 cup of uncooked jasmine rice
22 - 2 tablespoons of fresh dill, chopped
23 - 2 tablespoons parsley, finely chopped

# Instructions:

01 - Warm up your favorite Dutch oven with some oil. Sprinkle salt and pepper on the chicken and let it sizzle for about 2 minutes on each side. Then, take it out and set it aside.
02 - Toss in the butter and let it melt in the pot. Add the onions, diced carrots, and celery. Cook until they soften up. Quickly stir in garlic and chili for about 30 seconds.
03 - Pop the chicken back into the soup pot. Toss in lemon zest, granulated bouillon, herbs, and broth.
04 - Put the lid on, bring it up to a big bubble, then lower it to a gentle simmer. After 12-15 minutes, your chicken should feel tender.
05 - In a separate bowl, mix lemon juice with eggs and egg yolks using a whisk.
06 - Take the chicken out of the pot. Once it’s cool enough, pull it apart into bite-sized pieces.
07 - Pour the uncooked jasmine rice into the soup, cover it up, and simmer for 8-10 minutes until the rice is close to fully cooked.
08 - Turn off the heat. Slowly mix hot broth into the egg blend, one ladle at a time—around four in total—while whisking steady.
09 - Pour the egg mixture into the soup while stirring it gently. Toss in your shredded chicken, dill, and parsley.
10 - Taste test and sprinkle in more salt and pepper if needed to make the flavors pop.

01 - Rotisserie chicken works as an alternative.
02 - Brown rice is a great swap if you prefer it.
03 - Use less or more lemon juice depending on what you like.
