Latte Spiced Cookies (Print Version)

# Ingredients:

01 - ¾ cup dark or light brown sugar.
02 - 2¼ cups flour—you might need a smidge more.
03 - ½ teaspoon salt.
04 - 1⅓ sticks salted butter, softened.
05 - 1 teaspoon cinnamon, ground.
06 - 2 teaspoons powdered ginger.
07 - 1½ teaspoons baking soda.
08 - 3 tablespoons instant coffee or espresso powder.
09 - 2 teaspoons vanilla extract.
10 - ⅓ cup molasses (blackstrap).
11 - 1 large egg.
12 - Extra sugar for coating dough balls.
13 - Pinch of cinnamon for the icing.
14 - ½ teaspoon vanilla powder for the icing.
15 - 1¾ cups powdered sugar (for icing).
16 - 3 tablespoons milk for icing.
17 - 1 stick salted butter (for browning in the icing).

# Instructions:

01 - Whisk up the butter and sugar until it’s creamy. Stir in the molasses, egg, coffee, and vanilla until blended.
02 - In a separate bowl, combine baking soda, salt, cinnamon, ginger, and flour.
03 - Add the dry stuff into the creamy mixture a bit at a time. Keep stirring until dough forms. Add a dusting of flour if needed.
04 - Form dough into little rounds, coat them in sugar, and arrange on baking trays.
05 - Toast the butter on the stove until it smells nutty and golden. Mix it with powdered sugar, milk, vanilla powder, and a hint of cinnamon.
06 - Bake the cookies until they’re firm on the edges but soft in the middle. Let them cool entirely before drizzling the icing.
