Take 120g of chopped strawberries and toss with 15g of sugar in a bowl. Leave it there until the juices show up.

In a pan, mix the leftover 330g of strawberries with 45g of sugar and a generous squeeze of lemon. Heat it until it's bubbling, then lower to a gentle simmer. Cook for 10 minutes while stirring so it becomes syrupy and the fruit breaks down.

Pop the syrup in the fridge and let it cool all the way down.

In a tall glass, add 2-3 tablespoons of strawberry syrup, 180ml of non-dairy milk, some ice, and a tablespoon of the sweetened strawberries. Stir it up and adjust the sweetness however you like.
