Korean Noodle Dish (Print Version)

# Ingredients:

01 - 6 garlic cloves, finely chopped
02 - 2 lb thinly sliced beef (or use chicken, tofu, or shrimp as a swap)
03 - 1/2 bunch green onions, diced
04 - 1 large white onion, sliced into thin strips
05 - 1 lb Korean glass noodles (sweet potato noodles)
06 - 3 medium carrots, cut into matchsticks
07 - 1/2 lb spinach leaves
08 - 1 tbsp olive oil
09 - 4 tbsp sesame oil, divided use
10 - 6 tbsp soy sauce (or tamari for a gluten-free option)
11 - 3 tbsp brown sugar

# Instructions:

01 - Fill a big pot with water and bring it to a bubbling boil. Add a dash of olive oil, toss in the glass noodles, and let them cook for 5-6 minutes. Drain them and put them to the side.
02 - Get a pan nice and hot on high heat. Sear the beef until it's browned, adding half the soy sauce, sesame oil, and brown sugar as it cooks. Remove and keep it aside.
03 - Pour your olive oil into a separate pan and heat it up. Add thin-cut carrots and onion slices; cook till they soften. Stir in the remaining soy sauce, sesame oil, and brown sugar, then add garlic and green onions. Cook for a brief minute more.
04 - Throw in the spinach leaves and stir them around until they're wilted. Combine the cooked veggies and beef with the noodles at this point.
05 - Mix everything together in a big bowl until it's all evenly coated. Dish it up warm, and if you like, top it off with more green onions for a little extra flair.
