Korean Beef Cucumber (Print Version)

# Ingredients:

→ Korean Beef Mix

01 - 450g beef, ground
02 - 2 garlic cloves, finely chopped
03 - 1 tbsp sesame oil
04 - 1/4 cup soy sauce or coconut aminos
05 - 2 tbsp sugar-free sweetener (like monk fruit or erythritol)
06 - 1 tbsp rice vinegar
07 - 1/2 tsp red pepper flakes, crushed
08 - 1/4 tsp powdered ginger
09 - 3 green onions, chopped
10 - 1 tbsp sesame seeds

→ Cucumber Side Salad

11 - 2 medium cucumbers (around 470g), cut into thin slices
12 - 1/4 red onion, sliced thinly
13 - 1 tbsp apple cider vinegar
14 - 1 tbsp sugar-free sweetener (like erythritol or monk fruit)
15 - 1/2 tsp salt
16 - 1/4 tsp ground black pepper
17 - 1 tsp sesame seeds, for topping if you'd like

# Instructions:

01 - In a medium-sized bowl, toss the cucumber slices together with the red onion. Add in apple cider vinegar, sweetener, salt, and a pinch of pepper. Stir it up until everything's coated well. Let it sit while the beef cooks.
02 - Heat a big skillet on medium-high. Break the ground beef apart as it cooks, using a spatula to separate it into small bits. It should take 5-7 minutes to fully brown. If it looks too greasy, carefully remove any extra fat.
03 - Turn the skillet heat down to medium and add sesame oil plus minced garlic. Stir for a couple of minutes till the garlic smells awesome. Mix in soy sauce, rice vinegar, sugar-free sweetener, ginger powder, and crushed red pepper. Let it cook a few more minutes so the flavors soak in.
04 - Take the skillet off the heat. Toss in half the sesame seeds and half the sliced green onions, making sure to mix it all in evenly.
05 - Spoon the beef onto plates, sharing it amongst everyone. Sprinkle on the rest of the sesame seeds and green onions. Serve the fresh cucumber salad with it, adding extra sesame seeds on top, if you'd like.

# Notes:

01 - If you want the beef extra spicy, feel free to crank up the red pepper flakes.
02 - Make sure to check your soy sauce is gluten-free if needed, or just swap it out for coconut aminos.
03 - Not a fan of sweet salad? Scale back the sweetener to match your taste.
04 - Pack this dish in an airtight container for meal prep. It'll stay fresh in the fridge for 3 days.
