Turn your oven on to 180°C (350°F).

Combine the crushed biscuit crumbs with the melted butter and sugar in a small mixing bowl until evenly mixed and moistened.

Dump the mixture into a pie pan and press it down firmly on the base and sides. Pop it in the oven to bake for about 8 minutes, until it’s golden.

While the base is in the oven, mix the sweetened condensed milk, egg yolks, freshly squeezed lime juice, and zest in a bowl.

Once the crust is out of the oven, pour in the lime filling, smooth out the surface, and bake for 15-20 minutes until the filling sets.

Take the pie out of the oven and let it cool down completely. Once cool, cover it and stash it in the fridge.

Slice the pie into eight portions and, if you like, crown each one with whipped cream before serving.
