Key West Lime Pie (Print Version)

# Ingredients:

01 - 1/2 cup freshly squeezed lime juice.
02 - 1 can of sweetened condensed milk.
03 - 8 tablespoons of melted butter.
04 - 1 1/4 cups plain biscuit crumbs (like Petit Beurre or similar).
05 - 3 egg yolks.
06 - 2 1/2 tablespoons lime zest.
07 - 1 tablespoon sugar.
08 - Whipped cream to decorate (optional).

# Instructions:

01 - Turn your oven on to 180°C (350°F).
02 - Combine the crushed biscuit crumbs with the melted butter and sugar in a small mixing bowl until evenly mixed and moistened.
03 - Dump the mixture into a pie pan and press it down firmly on the base and sides. Pop it in the oven to bake for about 8 minutes, until it’s golden.
04 - While the base is in the oven, mix the sweetened condensed milk, egg yolks, freshly squeezed lime juice, and zest in a bowl.
05 - Once the crust is out of the oven, pour in the lime filling, smooth out the surface, and bake for 15-20 minutes until the filling sets.
06 - Take the pie out of the oven and let it cool down completely. Once cool, cover it and stash it in the fridge.
07 - Slice the pie into eight portions and, if you like, crown each one with whipped cream before serving.

01 - Make sure the pie has cooled fully before putting it in the fridge.
