Set your oven to 375ºC. Heat a big nonstick skillet over medium flame, cook the bacon till it's crunchy—takes about 8 minutes. Let it cool on a plate with paper towels. Then dice it up.

Drop roughly a tablespoon of Parmesan onto a large baking tray, shaping it into a small pile. Do the same with cheddar on top, flatten it a bit. Place a jalapeño slice over it, toss on some chopped bacon, and sprinkle with fresh black pepper. Repeat till you’re out of ingredients.

Pop the tray in the oven and cook until the cheese turns golden and gets crispy, about 12 minutes.

Give the crisps a moment to cool off on the baking tray before serving.
