Chop up the butter and pop it in a bowl safe for the microwave. Heat for around 45 seconds on high until it's melted. Then, let it cool off.

Take a big bowl, toss in eggs, sugar, and vanilla. Beat them really well for about 2 minutes until it's all smooth.

Mix in the flour, salt, and baking powder. Toss in the melted butter and whisk everything together until silky smooth. It’ll take roughly a minute.

Cover the bowl and let the mixture sit for 30 minutes. If you're prepping early, chill it in the fridge overnight but let it warm up for 30 minutes before using.

Fire up the pizzelle press. Lightly spray it with cooking spray, spoon 2 teaspoons of batter into the center of each plate, and close it up. Cook for about a minute or until gently golden.

Move each pizzelle using a thin spatula to a wire rack. Keep going with the rest. Once cooled, sprinkle on some powdered sugar if you're feeling fancy.
