Summer Veggie Mix (Print Version)

# Ingredients:

01 - ½ teaspoon paprika
02 - ¼ teaspoon ground black pepper
03 - ¾ cup tangy Italian salad dressing
04 - ¼ cup toasted sunflower seeds
05 - 4 hard-cooked eggs, chopped into chunks
06 - ½ cup pepperoncini rings
07 - ½ teaspoon garlic powder
08 - ½ red onion, finely chopped
09 - 2 green bell peppers, chopped small
10 - 2 cucumbers, diced into pieces

# Instructions:

01 - Pour in the dressing, add the sunflower seeds, pepperoncini, and all seasonings. Give everything a good stir until blended.
02 - Cut up the cucumbers, onion, and peppers, then dice up the eggs. Toss them all together in a big bowl.

# Notes:

01 - Switch up the peppers with red, yellow, or orange ones for a pop of color.
02 - Want it lighter? Use less dressing or try a different kind.
03 - Boil eggs ahead of time or grab ready-made ones from the store to save time.
04 - Leftovers? Keep them in a sealed container in the fridge for 2–3 days max.
